I have spent twenty years on both sides of the counter — competing, roasting, opening cafés, and teaching. I co-founded Handsome Coffee Roasters in Los Angeles, and spent twelve years at Blue Bottle Coffee building how a global company trains its people and talks about coffee.
What I care about is the part guests can feel but can't name. A team that works together instead of around each other. A cup that's right every time, made by someone who knows why. That doesn't happen by accident, and it doesn't come from a binder. It gets built.
